Q&A with Mogette Bistro’s owner and chef Daniel Muia

Daniel Muia, the owner and chef at Mogette Bistro, has a culinary upbringing that foodies can appreciate. Starting in the dining room at the Granite Club on Bayview Ave., Muia worked his way up the ranks to eventually took a position at The Fifth under Didier Leroy and eventually moved on to work at Restaurant Didier, Celestin, and Lumiere in Vancouver with the Food Network’s Rob Feenie. Before opening up his own restaurant, Muia was the chef de cuisine at Jamie Kennedy Restaurant.

Pulp Wars: A Citrus cooking showdown at Mildred’s Temple Kitchen

It all came down to citrus, $2,000 in prize money and gastro excellence on February 8, when three student chefs went head-to-head in the “Rising Chef Citrus Cook-off” competition at Mildred’s Temple Kitchen in Liberty Village. The showdown was part of the Winterlicious 2011 Culinary Event Series and presided by five Toronto-based foodie heavyweights: Christine Cushing (host of “Fearless in the Kitchen”), Anthony Walsh (Canoe’s executive chef), Ivana Raca (executive chef at McEwan), Anne Yarymowich (Frank @ the AGO’s executive chef) and Daniel Muia (chef and owner of Mogette Bistro).
